Q: My Model 60 was delivered Wednesday. I preseasoned it Thursday night per your instructions. The paint on top of the fire box popped off. It looks like there was no metal primer put on before the finish coat. What should I do?
A: Primers don't work with high heat paint. The paint won't stay subtle around the firebox, it loses it's elasticity and that's why it cracks and flakes. All you can do in the firebox area is treat it like a cast iron skillet and use cooking oil on the surface when it's not hot. Get a can of high heat bbq grill spray paint and touch it up before you put the oil on.Sorry for the inconvenience. Hope this helps.
Q: My firebox is starting to rust a little. What can I do to stop this?
A: You have two choices, wire brush and repaint seasonally or keep the exterior oiled with a light coat of cooking oil.
Q: I have the passion for grilling and smoking foods. We have a small cooking team that visits about 3 cook-offs a year and up till now have been cooking on multiple grills to accomplish our needs. I also want to use the new smoker for my own needs in the back yard. My questions are: Can I get the warming box on the model#60? What do you use on the bottom of the barrel, water or is that for draining the fat? Could we possibly cook multiple heat zones on this cooker? Could I heat the grill up hot enough to grill on and not slow cook? Finally, what would be the freight to 21044 zip code and how soon can I get it? How wide is it? Doors on both sides or one?
A: Yes, you can get a warmer on a 60 standard that $200.00 and is just to warm in. A deluxe is $350.00 and you can cook in that. The bottom of the tank is for a drain but you can close the gate valve and put water in it. Yes, you can use it as a grill. No, it does not have doors on both sides. Freight will be $500.00. There is a two week wait right now as spring is our busiest season. The cooker is 57" wide.
Q: I purchased an 84 several years ago and now need another. What is the price for a 108 with warming cabinet and front charcoal grill options.
A: Current pricing for model #108 is $3190,(it is soon to go up). The Long Neck conversion, which adds two foot to the trailer frame is $250. The front mount Char Grill is $750 and comes with a gauge. The deluxe warmer cabinet is $750 and also comes with a gauge.
Q: I have two questions for you. I used to have a cheap New Braunfels smoker and loved the way the food cooked on it tasted. I cooked only with charcoal, graying it first before putting it into the smoker. I'd then add one or two blocks of Hickory that had been soaked in water fo 30 min. This was primarily because finding seasoned hickory in good supply is hard to do.
Could I cook food on this Model 48 Mobile with charcoal the way I did on my old cooker, or is it's firebox so big that the cost of charcoal would be too much?
2. Could I season the Model 48 by wiping peanut oil within as you describe here and then build a fire to a temp of 250 degrees for about four hours? Again, I'm referencing the hassle of obtaining enough wood to get it done as opposed to purchasing bag of charcoal.
A: Yes, you can use charcoal and wood in the 48 the same way you were cooking.
Yes again, you build the fire for seasoning after the oiling.
Q: I will be cooking for 25 plus people. I want something big enough to cook a full size pig. Will the mobile 60 be big enough?
A: A model 60 will cook up to 100 pounds of food, 120 pounds is max.
Q: I already have the model 84 but would like something smaller at times. I would like to know if you make a gas burner for your cookers. It works great for smoking and slow cooking but I would like too use it for grilling at times and it is hard too keep it that hot. I thought about putting a pipe burner under the cooking area. What are your thoughts on this.
A: Any 84 will Grill. Just get it hot and keep it that way. It's one of the great things about our smoker cookers; they are first and foremost a great grill. It's easy to do. Just build a bigger fire and maintain a hotter bed of coals by adding wood to the firebox at more regular intervals.As for gas.... wood makes the best barbecue...... And it can't blow upon you...
Q: In you online directions you initially say to "Then, add a large piece or two of split wood, close chimney damper to 45 degrees and fire box vents to almost closed, and let cooker "smoke cure" which creates a hardwood smoke glaze. " How long should this smoke cure? Then...my understanding to cook with it, you manage your fire with damper and vents to get the temp you want and add a stick every 45-60 minutes to maintain. Is that right?
A: You can let it smoke cure for as long as you want and continue to add wood to it during this phase. Three or four hours is good, longer if you like. All afternoon won't hurt. And yes, you are right on with the maintaining of the fire. You can get longer burn times by controlling the air coming into the coals. A good hot bed of coals can get you long burn times....
Q: I'm debating on 2 of your smokers. The 48 moblie or the 60. I'm planning to use it on a cook out with friends for 15 people. I'm also interested in cooking a full size pig. Last, I do not want to buy a size too small and regret not buying a larger one.
A: You're right on track. Buy the 60. It will be perfect.
Q: I am interested in purchasing a # 84 tandem rig. What does your propane option consist of and what would be the additional cost?
A: Gas is available for the tandem 84, only if you plan to keep the smoker section of the unit "open air" (the gas burners are for outside use only).
The gas option consists of three (in the model 84), 50,000 BTU cast iron
dual ring loop burners eighteen inches each with automatic lighters. Cost per burner is $235 installed. In Model 84 we recommend three burners so the cost would be $705. Gas is a nice option but it is not a necessity to cook. Ninety-eight percent of what we build is without gas. That's because the smoker-cooker works so well you don't need gas.
Q: I just purchased a model 60 mobile from you and I love it! I am trying to find a silver directional wheel and tire that matches what came on the rig and I can't find one. Can you sell me a wheel and tire so I can have a spare?
A: Yes. The cost is $70 plus shipping.
Q: I'm looking for a cooker that I can build into a masonry island. Do you have any models that would work for this?
A: We sure do. Just pick the size you want and buy it less the trailer frame, cart or cabinet. You can buy any size, anyway you want. Deduct $395 for the model 84 trailer and $295 for the model 60 and 48 mobile's. Patio carts deduct $195. They look really good installed this way. And there are so many options available.
Q: Could you help me out with some information on cooking an 80 lb pig?
This will be my first pig.
A: Rub the skin with olive oil. To keep it from getting too dark. If the head is on, cover the snout and ears with alum foil. Cook at about 225 to 250 for eight hours. You might look at www.bbqsearch.com
Q: How long does it take to get the 48 and the 60 up to temp and is the temp fairly even from end to end?
A: Thirty minutes. All you do is build a fire and work from those coals by adding a stick of wood every 45 to 55 minutes.The heat draws down and back and the heat is everywhere all the time, so the heat gets even left to right and stays there. Works very well.
Q: Can I get one of your cookers with the spit.
A: You don't need it. The meat sears and sizzles much like a spit; in it's on juices without the moving parts... cooks better AND EASIER than anything you have ever seen... We guarantee it .
Q: We have a restaurant (SouthSide SmokeHouse & Grille. We are using a large Southern pride on wheels that i had previously used for my catering business. I am interested in a unit like the 84 for my catering and to cook smaller amounts of chicken and ribs.
A: The model #84 smoker/cooker is the complete barbecue grill and with a deluxe warmer would be perfect. It works so well it will spoil you! It's quick and easy to get one. Just pay for it and we can have it brought right to you, in many cases same day or next day service. You won't regret it.
Q: Are there any extras that can be added to the 84?
A: The deluxe unit is it. Comes with everything, except the kitchen sink.
Q: I don't know anything about cooking with woods and charcoal. I am propane user and sick of it. I want to be able to smoke and also grill.
