Kevin went for the Hot & Fast method of cooking on a smoker cooker. For his TURF he selected Prime Rib and his SURF was the bacon wrapped shrimp.
This Prime rib and bacon wrapped shrimp recipe gets some subtle flavors from cherry wood.

- 1 lb Jumbo Shrimp (15-20ct/lb)

Instructions
- TURF PREP:
- liberally rub Kosher Salt all over boneless roast
- Soak for a couple of hours
- Apply a wet rub such as Cow Crust from AmazingRibs.com’s recipes
- Refrigerate for 24 hours uncovered.
- TURF COOK:
- hours before cooking take it out of the refrigerator and warm to room temperature.
- Crank up your Lanb BBQ Smoker to about 450 degrees. Oak is good to bring the heat on.
- Set the roast on a grate over a roasting pan.
- Add Cherry wood to add a pleasing, mild flavor to the meat after you’ve reached 450 degrees.
- Let the temperature start to do until it hits 350 degrees for the last hour.
- Take the prime rib off the cooker when interior temp hit 123 degrees. Covered with foil, and let it rest for 25 minutes.
- SURF PREP
- Peel and de-vein the shrimp (you can leave the tail segment on for looks)
- Place all ingredients in a sealed bowl and shake.
- Marinate in the refrigerator for 3 hours so prep this ahead of time.
- SURF COOK
- After the prime rib off the smoker cooker it is time to throw on the Bacon Wrapped Jumbo Shrimp.
- Cut bacon strips in half and microwave partially cook (3 minutes) (If you wrap the bacon raw, your shrimp will be rubber by the time the bacon is crisp)
- Used skewers or individual toothpicks after wrapping each shrimp to hold the bacon.
- Cook at 325 for 25 minutes or until bacon is golden brown and crisp.
- After the shrimp is off the Lang BBQ Smoker, it is time to slice the prime rib.
