The first thing I will implement is moving up to 250 deg. from 225 deg. Next will be creating my own rub. I want to also thank you for signing my book. You mentioned that it is a first edition which makes it even more special to me. When you were signing it, I mentioned that the recipe I get the most complements on is the horseradish paste when I smoke a prime rib. But, right away you started telling me about one you now use that is great. Could you send it to me? I'd love to cook both and have a prime rib contest with my family. "Ben, I wanted to thank you and your crew for all your warm hospitality this past weekend at the cooking class with Chef Paul Kirk. Felt welcome the minute I stopped by the factory on Thursday, until the time I left on Friday after the class. You have a good crew, I’ll even say that about your guy Buck. LOL He’s a good egg too.

I appreciate the opportunity to season my pit and getting her ready to work. And work she did at the class. She pulled home real nice, funny how nice it was as at night -the warmer it blocked headlights of vehicles behind me. It was a long drive home, but I had a lot of BBQ to eat. Let me assure you, when I got home I was not hungry.

I think that was the best way to pickup a new Lang BBQ Smoker cooker - picking it up in person and then attending a cooking class with Chef Paul Kirk was the best! It was great to learn about BBQ and at the same time get to know my new pit. I think Chef Paul Kirk did a fantastic job of teaching the class. FAR better than the class I took last time by another BBQ Pitmaster. His way of teaching and being hands on really made it work in my head. Growing up if I had a question about something I was working the answer would always be “Learn by Doing”. And that’s exactly what Chef Pauls Class was like. Chef Paul mentioned about doing more BBQ Contests, I offered my services. The man is a good egg and a great guy to learn BBQ from. Thanks again for a great smoker and a great Class. I hope to see you all again at another class or maybe even in a BBQ contest somewhere down the road. Take Care.
